Annually in November, members of the Trade Protection Association elect one female tird-year apprentice
to the honorary position of "Stollen Girl".
The young female baker, pastry-cook or salesperson starts the baking if the giant stollen, inaugurates the Stollen Festival and becomes the charming representative of the Dresden Stollen at festivals and other tourist events.
