Brand protection, quality control & communication

Since 1991, the Schutzverband Dresdner Stollen e. V. (Dresden Stollen Protection Association) has represented the interests of stollen bakeries and pastry shops in the greater Dresden area. Its core tasks include brand protection for the Dresdner Christstollen collective mark and mandatory quality controls for all manufacturers of Dresdner Stollen. The association also acts as a brand communicator and promotes the brand with numerous events and campaigns. All this with the aim of preserving this special culinary tradition.

The approximately 100 members – ranging from one-man bakeries to companies with 200 employees – are organized according to the association’s statutes. According to these statutes, Dresdner Christstollen may only be produced in Dresden and a clearly defined area around the state capital. In addition, Dresdner Stollen must meet the minimum requirements for ingredients specified in the statutes and be handmade. Only a stollen that meets the high quality requirements may be labeled and sold as Dresdner Christstollen.

The trademark protection covers the Dresdner Christstollen as a branded product and geographical indication of origin. Today, the Dresdner Christstollen is registered as a protected product with several word and figurative marks. The protection association is also the owner of the “Dresdner Christstollen” Community trademark in the European Community.

WHERE CAN DRESDNER CHRISTSTOLLEN BE BAKED?

The association region

Dresdner Stollen may only be baked in a narrowly defined area around the state capital of Dresden. This stretches from the Saxon Elbe region with Weinböhla, Moritzburg, and Radebeul to Saxon Switzerland in Heidenau and Pirna. Ottendorf-Okrilla and Radeburg mark the northern boundary of the association’s territory, while Radeberg marks the eastern boundary. The specialty may also be baked south of Dresden, in Freital.

HOW IS QUALITY MONITORED?

All manufacturers of Dresdner Christstollen are subject to mandatory annual inspections. Starting in October, an independent committee of bakers, confectioners, and food industry experts convenes for this purpose. The sensory-trained experts evaluate the stollen according to established criteria and a strict point system. A minimum of 16 points must be achieved, with a maximum of 20 points available.

Internal and external texture, smell, taste: only stollen that meet the high quality requirements are allowed to bear the coveted stollen seal and be sold as Dresdner Christstollen.
